Menu Planning Monday #131

February 26, 2018

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

We got more snow this weekend, and that, coupled with the wind, kept us indoors quite a lot (other than being in our new hot tub!) So I spent a LOT of time working on a project and am happy to say it is just about complete! To see glimpses, check out my Instagram stories as I have been posting updates as I go.

Monday

Slow Cooker Chicken Tinga Tostadas

I keep out all heat in this recipe and we enjoy this one a LOT!

Modern Honey

tostadas

Tuesday

Million Dollar Spaghetti

It has been a while since we have had this, but I remember it being a hit! I will be lightening it up with either wheat spaghetti or spaghetti squash, and lower fat cheeses.

    1. Hahah yes!! I can feed you all for most of the week, but after that- it’s not up to just me to decide!

  1. Great list of dinner recipes! I have fallen off the meal plan wagon lately, but really need to get focused. I was thinking of adding a weekly meal plan post to my blog so I can stay on track. I’m definitely going to have to give that million dollar spaghetti a try for sure!

    1. I do!! Sometimes instead of making tacos with leftover meat, I will put it over cauliflower rice, or something like that!

  2. That menu looks so good AND it looks like stuff I can cook too! Win! Also, who knows what they’re eating on the weekend? I definitely don’t!
