Menu Planning Monday #130

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

We had a wonderful weekend filled with sports, parties and family time, and we are now ready for another week. Something fun I thought I would start doing is sharing the puzzles I put in my husband’s lunches every day with you! I recently started posting these on Instagram under the “stories” section every day, and people seem to be liking them, so I thought I would share here, too. So! If you want to see all of them, go HERE. Otherwise, I will include one or two here for you to guess. If you think you know it, guess in the comments!

7 Can Chicken Taco Soup

I love how easy this one is! I don’t use canned chicken, but instead just boil a couple of breasts and shred in my mixer. I think I will actually double this and freeze a batch for later.

Kielbasa, Pepper, Onion, and Potato Hash 

I will be using sweet potatoes for this, and will also add an over-easy egg on top. YUM!

  1. Your Kielbasa, Pepper, Onion, and Potato Hash looks a lot like a similar dish I make pretty regularly but I never thought to add sweet potato or egg. I’m definitely going to try that next time.
