Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
We had a jam-packed, but fun weekend, and are looking forward to a somewhat easy-going week! The kids only have school half of this week, so….YAY!

I cringe at the poor quality of this photo, so perhaps I should take a better one this year. BUT! This will be the fifth Valentine’s Day that I will make these steaks on this day, and they sure are a treat!

For this recipe, I season my chicken with taco seasoning and then put in the crockpot before covering with enchilada sauce. I cook on low and then about 30 minutes before serving I top with the shredded cheese. EASY recipe that can be eaten as-is, or put in tacos.

Wow it all looks so good! I desperately need to get better at meal planning throughout the week. It helps when things get crazy.
