Menu Planning Monday #116

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I am really looking forward to this week’s lineup, and I am actually going to plan what sides we will have with these meals as if I don’t, I am usually scrambling last minute. And that just defeats the purpose of meal planning.

Monday

Baked Spaghetti and Meatballs,

(With baked broccoli (seasoned with coconut oil, salt and pepper) and a bagged green salad)

I made this a few weeks ago with spaghetti squash and it was delicious! I think I will try it with wheat pasta this week.

Tuesday

Turkey Pot Pie Soup

I attempted this a bit ago and it was smelling DIVINE, until I added the coconut cream. For me, it was just too overpowering. I will be making it with regular cream this time and really have high hopes for it.

(Served with wheat Hawaiian rolls)

Date night! = Leftovers for the kiddos

Thursday

Slow Cooker Honey Teriyaki Chicken 

My family loves honey, so this looks right up our alley.

(Served over cauliflower rice and with asparagus)

Friday/Saturday/Sunday

We usually have something from Costco, leftovers, brinner, scrounge something up from the pantry…

  1. these all look so good! I love spaghetti but my husband isn’t a fan so I almost never get to have it anymore–unless we go out or something. great picks for the week!
