Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
We were teased with some beautiful Fall weather last week, but this week’s forecast is back to chilly and rainy. These meals look warm and perfect for the season!
Monday
Slow Cooker Chicken Burrito Bowl
These are easy and always delicious!
No. 2 Pencil
Tuesday
Garlic Herb-Crusted Roast Beef
I randomly bought a roast at Costco this past weekend, and this recipe looks like the perfect thing to do with it.

Wednesday
Date night! = Leftovers for kiddos
Thursday
Roasted Butternut Squash and Bacon Soup
I totally screwed up a recipe last week that involved butternut squash by buying frozen, pre-diced squash thinking (actually, not thinking) I was totally winning at life by skipping the dicing stage, but didn’t realize when I bought it that it wouldn’t thaw in its original form. Instead, it was mushy. So, I had to improvise and make it without the squash and was left with a bunch of mush. I looked up this recipe, stopped by the store on the way home the next day, made this soup Friday night and it was DELICIOUS!
Damn Delicious
Friday/Saturday/Sunday
Always a mystery!
I’m DROOLING! Can’t wait to try this recipe!
Tonight’s was a HIT!
Meal planning is something I struggle with so much! You’re inspiring!
Save the stress; I will do it for yoU! 🙂
I am going to get the brisket into the crock for the family.
I am drooling over that crust!
These all look great! I can’t wait until it cools off enough to use the slow cooker. Temps are still in the upper 80s in South Texas!
I forget sometimes people aren’t experiencing the same weather we are!
Slow cooker would be better than the stove or oven in the warm weather!
I always love to see what others menu preps look like!
I am with ya! Always looking for new ideas!
