Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

We were teased with some beautiful Fall weather last week, but this week’s forecast is back to chilly and rainy. These meals look warm and perfect for the season!

I randomly bought a roast at Costco this past weekend, and this recipe looks like the perfect thing to do with it.

Roasted Butternut Squash and Bacon Soup

I totally screwed up a recipe last week that involved butternut squash by buying frozen, pre-diced squash thinking (actually, not thinking) I was totally winning at life by skipping the dicing stage, but didn’t realize when I bought it that it wouldn’t thaw in its original form. Instead, it was mushy. So, I had to improvise and make it without the squash and was left with a bunch of mush. I looked up this recipe, stopped by the store on the way home the next day, made this soup Friday night and it was DELICIOUS!
