Menu Planning Monday #109

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

The Fall weather has definitely hit our city and that means cozy sweaters and warm drinks, but it also means Fall sports and activities are upon us. So, to make weeknights easier I have rounded up these easy recipes that have me excited for a delicious week.

Monday

Baked Honey Lime Chicken Taquitos 

I have an abundance of shredded chicken right now and really like the look of these taquitos… I am going to sub Greek yogurt for the sour cream, use wheat tortillas, and will use Greek yogurt cream cheese as well.

Tuesday

Ground Turkey Sweet Potato Skillet 

I am going to double this to have leftovers for the week for lunch. Yum!

Date night = leftover taco soup from Sunday night for the kiddos

Thursday

Slow Cooker Easy Thai Shredded Chicken 

I am going to serve this over cauliflower rice, which you can buy in steamable bags in the freezer aisle. Did you know that?!
