Menu Planning Monday #108

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I was looking at my calendar the other day (who am I kidding, I look at it daily) and I couldn’t believe how fast it has filled up. Just about every square (yes, I am old school) has something written on it. I guess that’s just to be expected once school begins, so to make life easier I included some easy meals that look easy and hearty to give us the energy we need to get through the busy week.

Monday

Slow Cooker Crispy Chicken Carnitas

I have made this blogger’s pork carnitas before (many times) and they were SO good, so I have really high expectations for this chicken version!

Friday/Saturday/Sunday

One night I am sure I will try to clean out the fridge and we will have random things, another I am thinking we will cook up some burgers, and another night will be something like brinner or pizza.

  1. Loving that everything is in one pan. Looks easy and yet the final product looks so delicious. I have been loving all your recipes so I’m sure I will love this one to….

  2. This is perfect! I think a lot of us struggle to come up with something “new” to eat. Using the slowcooker and one pan items relieves the pressure!
