Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Monday

California Burger Bowl

I feel like burgers are mandatory at some point over the holiday weekend, and since we have yet to have them, tonight is the night. And I am diggin’ this bunless version! I will also add some fresh mozzarella to the mix as well.

We had a phenomenal Monte Cristo sandwich in Disneyland and I have been thinking about them ever since! And funny thing, I didn’t even know what a Monte Cristo sandwich was until Disney… Did you? This day is definitely a splurge day.. though I will be using wheat bread! That helps, right?!

Friday, Saturday, and Sunday

All I know is that this is FARM CHICKS WEEKEND! WAHOO! I look forward to this weekend ALL year. As far as what we are eating these days… who knows!

  2. The Monte Cristo sandwich looks so delicious! I agree burgers are mandatory for the holiday weekend.

  3. Monte Cristos are amazing! I love that you so carefully plan out your week’s meals. I was actually so much better about this BEFORE I had the baby. Then for a while – despite the fact that my husband and I are both total foodies – it was egg sandwiches and frozen pizza for a bit. I’m getting much better now though lol 🙂
