Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
We are officially in the midst of the Spring sports season, which means busy nights and not a ton of time for cooking, so I am doing my best to find meals that are quick and easy!

These are SUPER good! But this time around I am doubling the recipe- these fed the five of us the first go-around, but there were NO leftovers because they were so tasty, and this mama wants lunch the next day.
