Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

It is officially the week of Christmas! SO FUN! Notice how during the week I am completely utilizing the crockpot AND planning meals that can be served more ways than one. WIN! Let’s keep it easy this week, shall we?  And gosh, I must be craving sandwiches because I am definitely seeing a pattern here…

Rick on the RocksI LOVE meals that can be served two ways, and I plan on serving these meatballs with spaghetti the first night, and then making into subs the next night. Super big win.

Saturday (Christmas Eve!) 

Crab Legs with Garlic Butter Sauce 

It’s a tradition on my husband’s side of the family to have crab on Christmas Eve, so we are keeping the tradition alive and I love it!

To go alongside, we will be having shrimp cole slaw and baked sweet potatoes

You can NOT go wrong with one of her recipes. This one looks like a crowd-pleaser with amazing reviews. Yes, I check reviews…

To go alongside we will be having calico beans, a green salad and rolls.
