Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
How was everyone’s Thanksgiving?! Are you still full? We have pretty much cleaned up all of our leftovers over here and are ready for something new, and this week’s lineup is looking pretty tasty.

That Coconut Soup with Lemongrass
I have never cooked with lemongrass before, but I am willing to give it a try if I can easily find it. If not, I will still try this recipe but will just leave it out.
