Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
This weekend was so jam-packed (all good things) but I feel just done-in for. So, as I sit here planning this week’s menu, I can’t help but want to keep it as simple as possible. So, here we go!
Monday
My in-laws are coming over to celebrate Halloween and my husband’s birthday with us, so I thought I would make one of my husband’s favorites, which just so happens to be a super easy recipe.

Date night = Turkey dog rollups for the kiddos
Wednesday
This will be my first time trying this one, and I think the kiddos are just going to devour it. I plan on topping ours with turkey pepperoni and peppers.

Simple Clean Fitness
I recently went to a freezer meal making party and it was fan-tastic! Seriously, we made five very different meals in 90 minutes and I got to do it while chatting with friends. SO fun! So, I plan on making one of those meals this day. But as a suggestion, I thought these pitas looked really good.
