Menu Planning Monday #61

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I feel like we’ve got a good variety of meals this week and two out of the three we have personally tried and loved, so at least you know you can count on those ones as good recommendations!

Monday

Foil Baked Salmon with Basil Pesto and Tomatoes 

I still have half a container of Costco’s Basil Pesto to use, and this recipe looks like the perfect thing to use it on.  Gwyn wasn’t always a fan of salmon, but I have continued to make it and now she loves it! Cal will tolerate it, but isn’t begging for me to make it. Maybe one day!

Tuesday

Baked Balsamic Chicken

When I first made this I thought, “Aww, I bet that’s going to leave a tough pan to scrub,” but it didn’t! And it was delicious.

The husband and I are off to Vegas for a few days which means some good eats for us! But because I felt rude leaving you with only two recipes this week, I will suggest this one as well:

Chicken Avocado Burritos 

These. Are. Everything.  And to save a few calories try subbing greek yogurt for the sour cream. You won’t notice the difference. I’m drooling.
