Menu Planning Monday #59

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I was feeling like something new this week, so I set out to find three new recipes I have yet to try, but that look easy and delicious. I am crossing my fingers for success!

Monday

20 Minute Shrimp and Sausage Paleo Skillet Meal

My daughter LOVES shrimp (and I have some leftover) and my son LOVES hotdogs (and calls anything that looks like one a hotdog) so I think this recipe will be a winner.

Crock Pot Low Carb Un-Stuffed Cabbage Roll Soup

This looks SO yummy! And with the forecast on the chillier side this week, I think this will be a good to warm us all up.

Tomato Basil Spaghetti Squash Bake 

This looks so fresh and delicious, but my husband is a meat man so I will be adding either some grilled or rotisserie chicken to this, or if I have leftover sausage from Monday’s meal, I will use that instead.

  1. I am ALL for meal planning, it’s a total game changer for ensuring that I eat healthy. At this point it seems so second nature for me that I get thrown off when my coworkers are like “how do you do it?”
