Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
And here I sit, on a Friday night after a week of solo-parenting and the sound of cooking a meal for anyone sounds hideous. My husband left town very last minute last Monday, after I had already gone grocery shopping, so I still ended up cooking when I normally wouldn’t when he is gone so that the ingredients wouldn’t go bad. So, this week I am taking it EASY!
Monday
I have some leftover frozen meatballs I can use, so if all I have to do is boil some water and make a simple sauce, I think I can manage.
But if you’re looking for a recipe to try out yourself, then I think this one looks simple, easy and tasty.

Costco Turkey Burgers and Costco Veggie Superfood Burgers
Have you had these? They are good! I really enjoy both of these.
And I couldn’t find a photo of the veggie burgers as I believe they are relatively new to Costco, and I took ours out of the box, but really, check them out. They’re tasty.
Wednesday
This meal consists of just throwing things in a crockpot, so I can probably manage this one, and it is a family-favorite.

Grilled cheese and tomato soup? Pigs in a blanket? Brinner? The possibilities are endless…
If the week is going well, maybe I will even throw in a few extra ingredients and make these Turkey Bacon and Avocado Grilled Cheese, which look really tasty.
