Menu Planning Monday #55

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

We’ve got a lot going on this week with Memorial Day, starting school and soccer practice, so I am leaning on some of my tried and true recipes that are quick and delicious to get us through the busy week.

Monday

We will be coming home from the lake tonight and with it being the night before school starts I am sure we will either pick something up on the way home or just eat leftovers.

Tuesday

Date night = Kiddos get grilled cheese and tomato soup

Wednesday 

Kielbasa, Pepper, Onion and Potato Hash 

We have a few sweet potatoes I need to use up, so this is a great recipe to use those up in.

Thursday

Crispy Slow Cooker Carnitas 

THESE ARE SO GOOD! And easy. Perfection.

Friday

Chicken Avocado Lime Soup

This is such an easy, light and delicious soup. Add a dollop of Greek yogurt to the top for an extra layer of flavor, too.

  1. These all look great. I don’t do a lot of meal planning anymore now that the kids are out of the house. With just the two of us, it is a lot easier just to whip something up. These dishes do look yummy.
