Menu Planning Monday #54

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

I was talking to a friend recently about menu planning, and she was shocked when she learned that I really don’t enjoy cooking.

Friends. Let me say this again. I am not a fan of cooking! That is why I choose EASY meals with as few ingredients as I can get away with that get me in and out of that kitchen, pronto! It’s important to me to provide my family with healthy meals, so that is a main reason I do plan out our meals, but don’t be fooled! It’s not my favorite past time.

With that being said, here is this week’s menu!

Monday

Slow Cooker Chicken Marsala

I checked our freezer and realized we have a TON of chicken, so I plan on saving a few bucks at the grocery store this week and am going to be using up some of that stash. I have all of the ingredients for this recipe on-hand except for the mushrooms, so I deemed this a great Monday recipe. It also seems pretty good as leftovers, too.

Tuesday

Date night = probably macaroni and turkey dogs for the kiddos- nice and soft for Gwyn’s throat.

Wednesday

Honey Garlic Salmon

When we went to Seattle last month, we brought home a bunch of fresh salmon. Since Gwyn loves salmon (and it’s soft for her to eat) AND Cal loves honey, I think this will be a meal the whole family will enjoy.

Thursday

Balsamic Caramelized Onion Turkey Burger

I love a good burger, and if it’s a healthier version, I am ALWAYS up for that. Since I have a love for balsamic, this recipe just looks right up my alley. Plus, if you don’t feel like making your own patties, Costco’s turkey burger patties are actually really good and would make this recipe even easier.

Friday

The Best Crockpot BBQ Chicken

Look at that. I have all of the ingredients for this recipe, too! I am killing it this week! Being a holiday weekend, I deem this a perfect one to move to sometime this weekend if needed, and it seems perfect for sharing, too.
