Menu Planning Monday #52

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

We just got back from being in Nevada for eleven days and as soon as we got home we needed to stock our empty fridge. And this week I decided to do that with the ingredients of two of our favorite meals that have been tried and true several times.

Monday

Kielbasa, Pepper, Onion and Potato Hash

I bought double the ingredients for this to have extra because mmmm. I also subbed russet potatoes for sweet potatoes.

The Two Bite Club

Tuesday

Leftovers.

Wednesday

Date night = Grilled cheese and tomato soup

Thursday

Taco Bowl with Avocado Lime Dressing 

This recipe is SO good! I add chicken and black beans and leave out the rice (and sometimes lettuce) and this is a crowd pleaser.

Friday

We are taking the kids to Silverwood for a day of fun and will grab something while out.

Saturday and Sunday 

Having a meal with family and will figure out the other night.

  1. The taco bowl looks delish. The avocado lime dressing sounds amazing. I’m always looking for ways to use avocado because I like it, I just don’t like it plain.

  2. Monday’s dinner looks delicious! This is something that would be really quick and easy to fix and I am sure the leftovers taste even better the next day reheated in the skillet. Can’t wait to make this for dinner.

  3. Sounds like some yummy dinners at your house this week. I’ve had avocado lime dressing before at restaurants but haven’t tried making it at home yet. I need to though because its always so delicious!

  4. This is the second hash recipe I have seen and man is that picture perfect or what!! It looks so good! Adding it to my to make list!
