Menu Planning Monday #41

Welcome to Menu Planning Monday!

For some, one of the worst parts about menu planning is actually deciding on what to make. I find myself stressed out once the late afternoon hits and I have no idea what we are having for dinner, so if I want to prevent that and stay on top of things, menu planning it is. Each week I try to plan for healthy meals that currently do not include any dairy or that can easily be adapted (baby is intolerant), that don’t include a bunch of crazy ingredients and that will get me in and out of that kitchen as quickly as possible.

Here is what we are having this week!

Monday

We had family come to town for the long weekend, so I didn’t get a chance to get to the store. Thankfully we have a fridge full of leftovers.

Tuesday

I will be grocery shopping in the afternoon on this day, and since we also have soccer to squeeze into this evening, I am thinking something easy and that we already have on-hand is in order, like spaghetti and meatballs.

Wednesday

Crockpot Honey Sesame Chicken Lettuce Wraps 

I have high hopes for these, I love me some lettuce wraps!

Thursday

Kielbasa, Pepper, Onion and Potato Hash

I am going to double this recipe so I have extra for a couple of lunches. YUM!

Friday

Honey Glazed Salmon

We have a couple of fillets already on-hand, so salmon it is!

Saturday and Sunday

Leftovers and eating out one night. 🙂

  1. That salmon looks delicious. I had no idea what to make tonight, but since it’s nice, I’m going to have the husband grill out turkey burgers. I think we’ll try those lettuce wraps later in the week. Yum!

  2. Oh man. The Thursday sausage and pepper hash looks sooo tasty. The honey sesame lettuce wraps look delicious as well. Mmm. Thank you for the ideas!
