Menu Planning Monday #34

Welcome to Menu Planning Monday!

For some, one of the worst parts about menu planning is actually deciding on what to make. I find myself stressed out once the late afternoon hits and I have no idea what we are having for dinner, so if I want to prevent that and stay on top of things, menu planning it is. Each week I try to plan for healthy meals that currently do not include any dairy or that can easily be adapted (baby is intolerant), that don’t include a bunch of crazy ingredients and that will get me in and out of that kitchen as quickly as possible.

Monday

We have other plans for tonight, so no meal here.

Tuesday

Date Night= Easy kid meal

Wednesday

Thai Peanut Sauce Spaghetti Squash

I love pad thai, and this was the easiest recipe I could find that did not include dairy and that used spaghetti squash for a nice, healthy twist. I will also grill up some chicken to add to it.

Thursday

Paleo Steak Salad with Creamy Garlic Vinaigrette 

YUM. A nice steak salad sounds so good right now. And did you know Costco sells hard-boiled eggs? Great for on-the-go snacks. I know. It’s not hard to boil one’s own eggs, but they’re individually packaged and you know what, they’re perfectly cooked and I like that I can rely on that. Yeah I am looking forward to this one.
