Welcome to Menu Planning Monday!
We’ve been on a pretty good streak lately with yummy meals and I am hoping this week follows suit. I am still not eating any dairy and am always searching for healthy, quick meals that get me in and out of that kitchen as quickly as possible.
The family and I went to Barnes and Noble recently and we picked up a cookbook called Make Ahead Paleo by Tammy Credicott. And let me tell you, this cookbook is right up my alley in every way. I am kind-of a cookbook snob. If it doesn’t have a picture next to the recipe, I won’t make it. This cookbook has a picture next. to. every. recipe.
Not only that, but they’re broken up into categories and it even promotes meal planning which is again sooo up my alley. So, this week I chose two recipes from it to give a try and I included them below. I am not really sure if that is legal or not..
Is it? The way I see it is I am promoting this cookbook because I think it is awesome. And I am citing my references. So, there you go.

These sound SO good. I don’t know what it is about meatballs lately but I am all about them! I bought Jenny-o ground turkey and Jenny-o turkey sausage for this recipe.
