Menu Planning Monday #25

January 11, 2016

Welcome to Menu Planning Monday!

I have been on a bit of a menu planning hiatus since becoming pregnant and having a lot of food aversions, and then our family was blessed with meals once baby was born, so I am just now starting to get back into the cooking spirit. Though if I am being honest, I am not entirely looking forward to it. I’d MUCH rather be soaking in more baby snuggles. But, we need to eat! So!

Since I have a new baby in the house, I am ALL about the quick and simple dinners. I am also staying away from dairy since our little man is sensitive to it, so I am on the lookout for dairy-free recipes or ones that can easily be adapted. So below is what is on the menu for this week. And of course, I will be trying to utilize the crockpot whenever I can.

Some of these recipes are new to me, too, and have never been tried, so my apologies ahead of time if they don’t turn out! Some of these are family-favorites and I will be sure to note which ones those are.

Crockpot Chicken Burrito Bowls

I have made this one before and we all liked it! I will be leaving the cheese off and letting the rest of the fam add their own as they please.

Friday

Crockpot Butternut Squash, Chicken and Quinoa Soup

Since I recently got a whole bunch of pre-cut butternut squash from Costco, this one is looking pretty simple and delicious.

Leftovers! Ooo, or maybe I can convince the family to eat at Panera Bread one night… which just so happens to be right next to Home Goods… I am thinking that sounds like a great idea… 🙂
