When I saw THIS recipe from Cook, Crave, Inspire for 6 minute microwavable caramels, I thought it was too good to be true. I LOVE caramel, especially when it is topped with sea salt.
My first batch, unfortunately, came out rock hard. After confiding with a friend who had already made these before, we decided I should try only microwaving for 4.5 minutes instead, and low and behold, that did the trick.
That’s right, only 4.5 minutes in my microwave, stirring every 90 seconds, and I had soft, chewy, melt-in-your-mouth caramels. No candy thermometer. No constant stirring. No stress.
Now THAT is what I call baking!
So again, go HERE for the original recipe, and then adjust your length of cooking time based on the power and age of your microwave. Shorter for a newer microwave, longer for an older one.
If you would like to dip your caramels in chocolate before sprinkling with sea salt, put some chocolate chips in a mIcrowave safe bowl and mIcrowave for 30 second increments, stirring each time, until melted.
Submerge your caramels, one at a time, and pick up with a fork, tapping off the excess.
Place on wax or parchment paper to dry and sprinkle with coarse sea salt.
Let harden and enjoy!
