It’s not always easy finding something both of my kids like to eat, but for the most part, they both enjoy a decent grilled cheese. With Cal not having all of his teeth yet, incorporating a variety of veggies into their diets isn’t always easy.
So, after scouring the fridge one afternoon, I randomly decided to saute some diced bell peppers, spread some avocado onto the inside of one of the pieces of bread for the grilled cheese, add the sauteed bell peppers and throw it all into the panini press and see what happened.
Maybe it’d be good? Or really bad….
They liked it!
Both kids ate 1/2-3/4 of a sandwich, along with some other sides. Aaaaaand I ate the rest! This was an easy lunch item that I will make again.

Grilled Cheese?
Ha, yes, Nate. With hidden veggies. Except when using a panini press, it’s called a panini.
I’m not sure exactly why but this website is loading very slow for me.
Is anyone else having this problem or is it a problem on my end?
I’ll check back later and see if the problem still exists.
