Skinny Chocolate (Heavenly) Muffins. Like REALLY skinny. DROOL.

When I get over-whelmed or stressed, I walk (briskly) over to the freezer, swing it open, stick my hand in the yellow and brown bag, pull out a handful of chocolate chips and toss my head back.

And instantly I feel better.

This is not good.
I go through about a bag every week or two. In my defense they’re usually the chocolate chunks and those are bigger, therefore not having as many in the bag and they disappear faster.
Okay that was the lamest excuse ever.
This is pathetic and not good for me. I am going to have diabetes and rotten teeth very soon.
I do love my sweets but finally decided enough was enough. I can’t be pounding chocolate chunks anymore or I am going to turn into one.
I started looking around on the internet for a healthier alternative and stumbled upon this recipe. While it contained a lot of ingredients, they were all healthy and because of this I was skeptical. I gave it a go anyway since I had everything on hand.
And let me just tell you.
Oh.
My.
God.
These chocolate muffins are heavenly. They are incredibly moist. They have a rich chocolaty taste. They are the best chocolate muffins I have EVER had.
They contain no butter. No flour. And I sweetened them with Truvia. They only contain egg whites and also have Greek yogurt and whole oats in them.
Sold.
They.
Are.
Bomb.
These are definitely my go-to sweet snack now and when I had The Hubby try these after making for the first time….. let’s just say he pounded four of them right then and there.

And when eaten shortly after being taken out of the oven they are like Lava Cake. Ooey, gooey and delicious.

And Gwyn…

…was in heaven. She has NO idea that these actually aren’t bad for her!
Below is the recipe and directions with my slight alterations.
Ingredients:
1 3/4 cups old fashioned oats
3 egg whites
3/4 cup unsweetened cocoa
  • 1/2 cup unsweetened applesauce
  • 1 tsp. vanilla extract
  • 1/2 cup plain Greek yogurt (or regular plain low fat yogurt)
  • 1-1/2 tsp. baking powder
  • 1-1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup hot water
  • 1/2 cup sugar substitute- I used Truvia. (Or 1 cup Splenda)
  • 1/4 cup dark chocolate chips -These have less sugar than regular milk or semi-sweet chocolate chips. Or use peanut butter chips as these too have less sugar.
 
Directions:
 
Preheat oven to 350 degrees.
Line a muffin pan(maybe two depending on how full you fill them) with cupcake liners, or spray muffin tin with non-stick cooking spray. Set aside.
In a blender, (or food processor), mix all of the ingredients together, except for the chocolate chips. Blend until oats are ground and mixture is smooth.
Pour mixture into prepared muffin pans and fill pretty generously. A little more than 3/4 full. I like to use something with a spout for this. Then, put half of the chocolate chips into the batter so that each muffin is ensured some chips.
Place muffin tins in the oven for 10 minutes.  After 10 minutes, remove muffins from the oven (but don’t shut oven off), and distribute the other half of the chocolate chips on top of each muffin.
Place  the muffins back into the oven and bake for an additional 2-5 minutes, or until a toothpick comes out clean.
 
*Note, you could skip this step by putting all of the chips in the batter and baking the muffins for 12-15 min straight, but this method gives the muffins the traditional ‘VitaTop Muffin’ look with the chocolate chips on top!
 

Cool muffins before removing from pan. ENJOY!!!

  2. Pinterest said they were about 24.5 calories each this way. What I want to know is how many more calories each is if you use real sugar instead of a sugar substitute?

I just calculated the nutrition facts in myfitnesspal as stated above (Im always curious before I make something), except that I put in for 2 tbsp of mini chips instead of 1/4 cup (so half as much chocolate, or 140 cals less for the entire batch). It came to 80 cals each. If you saw this on Pinterest I dont know what people are doing, but 25 cals for a full muffin is pretty much impossible. But I cant wait to make these!!!!! Thanks for the recipe.

  4. So I often calculate the nutrition facts for things before I make them, and I put the exact recipe in as above except half as much mini chips, and I got 80 cals each. If you used all the chocolate it would be about 90-95 cals each. So really not bad for a chocolate muffin. But not 25 cals like someone on pinterest is advertising. This looks like an awesome recipe and I can’t wait to make it!!!!!!!!!

  6. That 25 calorie recipe is this recipe made into *mini* muffins. I just made these and it made 48-50 mini muffins and I used half the chocolate chips which came out to be about 20 calories per mini muffin.

  7. For those who are wondering about the nutrition facts here they are (split into 19 muffins):
    80 kcal, 12g carbs, 3g fat, 3g protein, 5g sugar.

  8. I also used stevia, which has 0 kcals, ( I used about 12 packets), and a tiny bit more chocolate chips, and normal plain yogurt. If you used greek yogurt instead it would contain slightly more protein. Great recipe!

    I am a nutritionist and will share this with my clients as a end of the day dessert option.

  9. I just found this recipe and made it today….I was soooo excited because I love chocolate!! I followed the recipe to a T but the centers never baked! I got 22 muffins (which I could have put less in each one because some overflowed). I just see that the recipe I had called for cream of tartar or vinegar as a substitute for that, I didn’t have cream of tartar so I used the vinegar. I wonder if that is what happened. I’m truly bummed…Did anyone else have trouble with this recipe??
