Hubby’s Favorite Baked Salmon with a Devilishly Easy Chutney Salad

The Hubby recently brought back a plethora of salmon from Alaska and our freezer is now stocked. I am so unfamiliar with how to cook fish, but I found a recipe that is now a total keeper. The Hubby even said, “This is some of the best salmon I have ever had.”
Now, I don’t post recipes often, but when I do they are either recipes that I feel good about feeding to my family as they are healthy and incorporate more veggies, or they are recipes that are incredibly EASY that LOOK more difficult, therefore impressing The Hubbs. This one being both healthy AND ridiculously easy!

Here is the original recipe and below is the recipe with my alterations.
Ingredients:
2 ts. chopped garlic (I use the canned kind. Easy peasy.)
2-3 Tb olive oil (I just do a light drizzle, not much is needed.)
1 ts. basil
1 ts. salt
1 ts. pepper
1 ts. parsley
1 Tb lemon juice. (Again, I use the pre-squeezed stuff.)
2 (6 oz) salmon fillets
Directions: 
1. In a medium bowl, prepare marinade by mixing the first seven ingredients. Place salmon in a medium glass baking dish lined with foil (for easy cleanup), cover with the marinade, then cover the baking dish with foil and refrigerate at least an hour. (I’ve also baked immediately and it turned out good that way too!)
2. Preheat oven to 375* and bake for 35-45 minutes, until easily flaked with a fork. We prefer our salmon a little more on the “medium” side, so it takes 35 minutes in our oven.
                                             
                                             
I also made a little peach/mango chutney from leftover ingredients I had in my fridge after making this awesome recipe from a very talented chef who never ceases to amaze me in the kitchen. And I am totally giving myself up here, but this was the EASIEST thing EVER and The Hubby was seriously impressed! He thought (still thinks…. probably until now) that I made it all from scratch. Well, I didn’t! Ha! I used three items!
Ingredients:
Mango/peach salsa from Costco- So good.
Almonds (because that is what I had)
Red cabbage.
All I did was chop up some red cabbage, chop up some almonds and pour in some salsa!

And he LOVED it!
