These healthy granola bars are SO easy to make, taste the bomb.com, and I feel good about giving them to my family! Or eating the majority of them myself…..
Here is the original recipe and below is the adapted recipe that I made with my alternatives.
Ingredients:
2 cups rolled oats
1/2 cup brown sugar
1/2 cup ground flax seed
1 cup of flour (The second time I made these I used wheat flour and couldn’t taste a difference!)
3/4 ts ground cinnamon
3/4 ts kosher salt
1/2 cup honey (I used agave the second time, worked great!)
1 egg, lightly beaten
1/2 cup vegetable oil (I used 1/4 cup the second time and hardly noticed a difference!)
2 ts. vanilla extract
1 cup dried fruit (I used a mix of cherries, cranberries and blueberries)
3/4 cup chocolate chips
Directions:
3. Make a well in the center, and pour in the honey/agave, egg, oil and vanilla.
4. Mix well!! Then add in dried fruit and chocolate chips.
I did most of this with one hand, as the other arm was holding this bundle of joy.
5.) Pat the mixture evenly into the prepared pan. ( I had to put him down for this step.) 🙂
6. Bake for 30 minutes in the preheated oven, until the bars begin to turn golden around the edges.
7. Cool on wire rack for about 30 minutes before cutting. Do not allow the bars to cool completely before cutting because they will crumble.
I love eating these as a snack… in fact, my whole family does! Gwyneth calls them “bars!”
