Below are my slight alterations to both recipes.<\/p>\n<p><strong>Bread Ingredients:<\/strong><\/p>\n<p>2 cups pumpkin puree<\/p>\n<p>2\/3 cup vegetable oil<\/p>\n<p>3 eggs, beaten<\/p>\n<p>1 tsp vanilla<\/p>\n<p>3 cups all-purpose flour<\/p>\n<p>2 cups white sugar<\/p>\n<p>2 teaspoons baking soda<\/p>\n<p>2 teaspoons pumpkin pie spice<\/p>\n<p>1 teaspoon salt<\/p>\n<p>1\/2 teaspoon baking powder<\/p>\n<p><strong>Streusel topping ingredients<\/strong><\/p>\n<p>1 1\/4 cup all-purpose flour<\/p>\n<p>1\/2 cup brown sugar, packed<\/p>\n<p>1\/4 cup sugar<\/p>\n<p>1 teaspoon pumpkin pie spice<\/p>\n<p>1\/2 cup (1 stick) unsalted butter, melted<\/p>\n<p><strong>Directions:\u00a0<\/strong><\/p>\n<p>1.) Preheat oven to 350*. Spray 8&#8243; bread pan (s) and\/or muffin tin (s) with cooking spray (or use muffin cups.) I used one bread pan and one muffin pan.<\/p>\n<p>2.) Mix pumpkin, vanilla, vegetable oil, and eggs in a mixer.<\/p>\n<p>3.) In a separate bowl, mix all the dry ingredients with a whisk.<\/p>\n<p>4.) Slowly add the dry ingredients to the wet ingredients in the mixer.<\/p>\n<p>5.) Pour half the batter into each bread pan, or half into one bread pan and half into 12 muffin cups.<\/p>\n<p>6.) Combine the streusel topping ingredients in a bowl and crumble with a fork. Add to the top of the batter by pressing lightly.<\/p>\n<p>7.) Bake the bread for 50-60 minutes and the muffins for 18-20.<\/p>\n<p>8.) Cool bread on a wire rack before removing from pan.
