SOOOO so good. And EASY! The Hubby was beyond impressed and that, of course, makes me feel good.<\/p>\n<p>Here is the <a title=\"original recipe\" href=\"http:\/\/addapinch.com\/cooking\/2012\/06\/15\/caprese-grilled-chicken-with-balsamic-reduction-recipe\/#.UhrUDZK1EwB\">original recipe<\/a>, and below are my adaptations.<\/p>\n<div>\n<div><strong>Ingredients:<\/strong><\/div>\n<ul>\n<li itemprop=\"ingredients\">6 grilled boneless, skinless chicken breasts<\/li>\n<li itemprop=\"ingredients\">2-3 Tbs olive oil<\/li>\n<li itemprop=\"ingredients\">salt and pepper to taste<\/li>\n<li itemprop=\"ingredients\">1 ts basil<\/li>\n<li itemprop=\"ingredients\">\u00bc cup balsamic vinegar<\/li>\n<li itemprop=\"ingredients\">1 tablespoon butter<\/li>\n<li itemprop=\"ingredients\">6 slices mozzarella cheese<\/li>\n<li itemprop=\"ingredients\">6 slices tomato<\/li>\n<li itemprop=\"ingredients\">6 large basil leaves (My neighbors gave me a bunch of fresh basil from their garden which was PERFECT for this recipe! So fresh!)<\/li>\n<\/ul>\n<div><strong>\u00a0Instructions:<\/strong><\/div>\n<\/div>\n<div>\n<ol>\n<li itemprop=\"recipeInstructions\">Season chicken breasts with olive oil, salt, pepper and basil. Grill on BBQ until done, or bake at 350* for 1 hour until done (This is what I did.)<\/li>\n<li itemprop=\"recipeInstructions\">As chicken is cooking, pour balsamic vinegar into sauce pan or skillet and cook until reduced by half. Add in butter and stir with a flat whisk until completely combined.
