I feel like we sort-of ate like crap this summer.<\/p>\n
I mean, not for all of it. But we definitely ate more pizza and take-out than normal and I did not feel good about it. Being on the go will do that sometimes, so now that we are settled into our new home and are staying put for a while I have been able to cook again and am eager to incorporate healthy meals back into our regular every-day routine.<\/p>\n
While browsing Pinterest<\/a> I came across this zucchini lasagna and knew this would be on our week’s menu.<\/p>\n The Hubby LOVED this. I did, too. We didn’t miss regular lasagna noodles at all. The only thing I did different was that I softened the zucchini on the stove instead of a BBQ, because I am lazy like that. I thought it turned out fine!<\/p>\n <\/a> <\/a> <\/a> <\/a><\/p>\n Here is the original recipe from Skinny Taste<\/a>:<\/p>\n Ingredients:\u00a0<\/i>\u00a0<\/strong><\/p>\n Directions:<\/strong><\/p>\n Preheat\u00a0oven to 350\u00b0.<\/p>\n 1. In a medium sauce pan,\u00a0brown\u00a0meat and season with salt. When cooked\u00a0drain\u00a0in colander to remove any fat.\u00a0Add\u00a0olive oil to the pan and\u00a0saute\u00a0garlic and onions about 2 minutes.\u00a0Return\u00a0the meat to the pan,\u00a0add\u00a0tomatoes, basil, salt and pepper.\u00a0Simmer on low for at least 30-40 minutes, covered. Do not add extra water, the sauce should be thick.<\/p>\n 2. Meanwhile,\u00a0slice\u00a0zucchini into 1\/8″ thick slices,\u00a0add\u00a0lightly salt and\u00a0set aside\u00a0or 10 minutes. Zucchini has a lot of water when cooked, salting it takes out a lot of moisture. After 10 minutes,\u00a0blot\u00a0excess moisture with a paper towel.<\/p>\n 3. On a gas grill or grill pan,\u00a0grill<\/b>\u00a0zucchini on each side, until cooked, about 1-2 minutes per side. Place on paper towels to soak any excess moisture.<\/p>\n 4.\u00a0In a medium bowl\u00a0mix\u00a0ricotta cheese, parmesan cheese and egg.\u00a0Stir\u00a0well.<\/p>\n 5. In a 9×12 casserole\u00a0spread\u00a0some sauce on the bottom and\u00a0layer\u00a0the zucchini to cover. Then\u00a0place\u00a0some of the ricotta cheese mixture, then\u00a0top\u00a0with the mozzarella cheese and\u00a0repeat\u00a0the process until all your ingredients are used up.\u00a0Top\u00a0with sauce and mozzarella and cover with foil.<\/p>\n 6.\u00a0Bake\u00a045 minutes covered at 375\u00b0, then uncovered 15 minutes. Let\u00a0stand\u00a0about 5 – 10 minutes before serving.<\/p>\n ENJOY!
