Lean ground beef was on sale at the store today, so I bought some with the intent of making a meatloaf but didn’t have an exact recipe in mind, so I just got the basic concept after looking at a handful of recipes online and then created my own. Below is what I did!<\/p>\n

Ingredients:<\/strong><\/p>\n 2 eggs<\/p>\n 3\/4 cup milk<\/p>\n 3\/4 cup Italian Style bread crumbs ( I used Gluten Free*)<\/p>\n 2 pounds lean ground beef<\/p>\n 2-3 TBSP fresh Italian herbs (I used parsley, rosemary and thyme)<\/p>\n 1\/2 cup shredded carrot<\/p>\n 1\/4-1\/2 cup diced bell pepper<\/p>\n 1\/2 cup onion<\/p>\n salt and pepper to taste<\/p>\n <\/p>\n For the Glaze:\u00a0<\/strong><\/p>\n 3\/4 cup ketchup<\/p>\n 2 TBSP Worcestershire sauce<\/p>\n 1 TBSP mustard<\/p>\n 2 TBSP honey<\/p>\n <\/p>\n Directions:<\/strong><\/p>\n Whisk the eggs, milk, and bread crumbs in a large bowl. Then add the lean ground beef, freshly chopped herbs, carrots, bell peppers, onion, salt and pepper and mix well.<\/p>\n NOTE:<\/strong> The meatloaf came out a little wet, and I THINK it could be due to all the water in the veggies. This could possibly be prevented if you saute the veggies first. Or, just dab the water out with a paper towel.<\/p>\n Place the mixture in a greased loaf pan. I used parchment paper and spritzed it with a little Pam. Bake for 40 minutes. Meanwhile, mix together your glaze and then spread on top of the loaf and bake another 20ish minutes until done. (Times may vary depending on the oven.)<\/p>\n Our whole family gobbled this down and I love that it was packed with veggies and wasn’t dry at ALL.
