Happy Thanksgiving week! This week is looking different for us than expected as I am sure it is for many, but we are going to make the best of it and have Thanksgiving in the van since our house is still under construction. I have compiled a list of what we plan to have this year and will be putting together as much of it beforehand as I can since we only have the oven in the van and our smoker to cook with. Tune in to Instagram stories to check it out HERE!<\/a><\/p>\n Below is what is on the menu for our Thanksgiving meal, and I also added a few extra recipes at the bottom if looking for more ideas.<\/p>\n Smoked Turkey<\/a><\/p>\n We are smoking our turkey on the Rec Tec this year, and while we don’t have an exact recipe yet, this is a start!<\/p>\n <\/a><\/p>\n \n Chorizo and Cornbread Stuffing<\/a><\/p>\n I am not a fan of traditional stuffing, but THIS is delicious! I made it two years ago and it was so good.<\/p>\n <\/a><\/p>\n Crispy Baked Sweet Potatoes\u00a0<\/a><\/p>\n These are phenomenal!! The last time they took longer to cook than anticipated, so plan for that!<\/p>\n <\/p>\n Roasted Parmesan Green Beans\u00a0<\/a><\/p>\n I bought fried onions to maybe add to these to give them that Thanksgiving feel.<\/p>\n <\/p>\n Pumpkin Earthquake Cake\u00a0<\/a><\/p>\n I made this for my husband’s birthday this year and it is SO GOOD. So, so good! I also made it for Thanksgiving last year.<\/p>\n <\/p>\n And here are some more recipes that look equally delicious if still on the hunt for more ideas.<\/p>\n <\/p>\n Cranberry Salsa<\/a><\/p>\n For an even easier version of this, buy the cranberry-orange relish from Trader Joes and put it over cream cheese. Delish!<\/p>\n <\/p>\n Creamy Mashed Potatoes<\/a><\/p>\n If looking for traditional potatoes, you can’t go wrong with this recipe!<\/p>\n <\/p>\n Homemade Pumpkin Dinner Rolls<\/a><\/p>\n I made these two year’s ago and they are just so dang cute! And tasty!<\/p>\n
