Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.<\/p>\n

Whew! Last week was a super busy one, and I am happy to say this one is a lot more mellow! But, those Spring sports start up soon, so I really want to savor the slow. Here is our menu for the week:<\/p>\n

Monday<\/strong><\/p>\n

Crispy Baked Chicken Thighs\u00a0<\/a><\/p>\n

I love how this recipe is baked instead of fried!<\/p>\n

The Salty Marshmallow<\/p>\n

Tuesday<\/strong><\/p>\n

Turkey sausage and peppers<\/a><\/p>\n

I use sweet potatoes in this recipe, and if I am short on time, I skip the potatoes all-together, and just brown the sausage in the pan, and then add the peppers in until soft. That’s it! Super easy.<\/p>\n
