Drop<\/span>\u00a0zucchini halves in boiling water and cook 1 minute.\u00a0<\/span>Remove<\/span>\u00a0from water.\u00a0<\/span>Place<\/span>\u00a01\/4 cup of sauce in the bottom of a 9 x 12″ baking dish, and place zucchini halves cut side up<\/span><\/p>\n .\u00a0<\/span>In a large saute pan,\u00a0<\/span>brown<\/span>\u00a0<\/b>sausage, breaking up as it cooks into smaller pieces until browned; set aside.\u00a0<\/span>Heat<\/span>\u00a0oil (or cooking spray) and add onion, garlic and bell pepper.\u00a0<\/span>Cook<\/span>\u00a0on a medium-low heat for about 2-3 minutes, until onions are translucent.\u00a0<\/span>Add<\/span>\u00a0chopped zucchini, season with salt and pepper and cook about 2-3 minutes.\u00a0<\/span>Combine<\/span>\u00a0with sausage and cook a few more minutes.<\/span><\/p>\n Using a spoon,\u00a0<\/span>fill<\/span>\u00a0each hollowed zucchini with 1\/3 cup cooked sausage, pressing firmly.\u00a0<\/span>Top<\/span>\u00a0each with 2 tablespoons each of sauce, 1 tablespoon each of shredded mozzarella cheese and 1 teaspoon each of\u00a0Parmesan\u00a0cheese.<\/span><\/span><\/span>\u00a0<\/b>Cover\u00a0<\/b><\/span>with foil and\u00a0<\/span>bake<\/span>\u00a035 minutes until cheese is melted and zucchini is cooked through.<\/span><\/p>\n
