Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.<\/p>\n
Two of the three recipes are tried-and-true favorites, and I have high hopes for the third!<\/p>\n
Monday<\/strong><\/p>\n BBQ Chicken Tostadas<\/a><\/p>\n We had these a couple of weeks ago and the whole family devoured them. Super easy to make, too! I cooked the corn tortillas on the stove, softening them up, and we ate them more like a taco and they were delicious.<\/p>\n (Hint- Cook enough chicken for this recipe and Thursdays, then you’re set!)<\/p>\n Cupcakes and Kale Chips<\/p>\n <\/p>\n Tuesday<\/strong><\/p>\n Cal requested spaghetti and meatballs… so that’s what we will have!<\/p>\n Wednesday<\/strong><\/p>\n
