Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.<\/p>\n

I’ve got a list of all new recipes this week that I am so excited to try! Two of them were recommended from friends and I appreciate that very much!<\/p>\n

Spaghetti Squash with Bacon, Spinach and Goat Cheese<\/a><\/p>\n

I’m not sure my kiddos have ever tried goat cheese before, but now seems like the perfect time! This recipe looks delish! And because my husband considers a dish without\/very little meat a side dish, I think I will add some sausage to this as well.<\/p>\n

Date night = ham and cheese roll-ups for the kiddos<\/p>\n

Pepper Pizzas<\/p>\n

My sweet friend, Kara, shared this recipe with me and said they were a HIT with her family, so of course I have been excited to try them out!<\/p>\n

Directions: (recipe for 1)<\/strong>
\nTake half a bell pepper (probably yellow or red, not green)
\nPut a little pizza sauce in it, fresh mozzarella,\u00a0and any pizza toppings you’d like!
\n(We flattened them a little too)
\nThen broil
\nThe pepper as a crust was so good and not soggy.<\/p>\n
