Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.<\/p>\n
I must be having major Mexican food cravings as I have planned two meals this week which fall into that category.<\/p>\n
Monday<\/strong><\/p>\n Green Chile Chicken Enchiladas\u00a0<\/a><\/p>\n I like that these are skinny enchiladas made with greek yogurt, wheat tortillas, and reduced-fat cheese, but still look amazing!<\/p>\n Well Plated<\/p>\n <\/p>\n Tuesday<\/strong><\/p>\n Date night! = Leftovers for the kiddos<\/p>\n Wednesday\u00a0<\/strong><\/p>\n
