Welcome to Menu Planning Monday! Here I plan out easy, healthy meals for the week so that you don’t have to.

The last couple of weeks have been a little out of the norm around here, and thus my meal planning has been a little non-existent. And with my husband out of town for a week, the kiddos and I ate the random things we could throw together with what we already had in the house.

Do you cook when your significant other is out of town? I sure don’t! Well, things like spaghetti, grilled cheese, and macaroni. All of which was served during his week of absence. 🙂

We made an unplanned grocery run when he returned home, and since I didn’t plan out my week yet, I didn’t have a grocery list. At all. So, I planned this week’s meals based on two dinners I knew all of the ingredients for, and chose the last one based on the ingredients I knew we already had.

So, here is what we are having this week!
