Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Last week, a friend of mine, Angela, made a request for this week’s Menu Planning Monday and I was so happy to oblige because the idea was brilliant! Many of us are in the season of Spring sports, after-school activities, and late nights, and having dinners to take on-the-go so that our families are still getting a decent meal in while out and about is just plain nice. SO! This week I have compiled a list of dinners that can be taken to-go to hopefully make those busy nights easier!

1. Taco Pop Tarts 

If mine turn out half this good I will call these a huge win! I love how “handheld” these are and I think our kids would get a kick out of eating them.

2, DIY Instant Noodle Cups 

I love this idea! You can basically put any dinner in a to-go container, grab a plastic fork and off you go. It would be even nicer not to have dishes to keep track of, so I would even go so far as to find disposable containers for dinners like these…Or not! I suppose I can wash a few dishes…

3. Oven Baked Meatball Sandwiches

Make this recipe even easier by buying pre-cooked meatballs. Wrap in some tin foil and there you go.

4. Ground Turkey Freezer Burritos

Basically, you can make any burrito combination this way, freeze, and then grab and go.

5. Mini Martha Stewart Meatloaves

Love this idea! Mini meals in a cupcake liner. Brilliant!

6. Cream Cheese and Chicken Taquitos

Same idea as the burritos; wrap in tin foil and go! You could even dip these in those mini 100 calorie guacamole packs. YUM! I would use wheat tortillas and the Greek yogurt cream cheese.

7. Spaghetti and Meatball Bites

These might be a tad messy…. but maybe you can also put these in the cupcake liners, grab a few napkins and call it a day? Again, to make it easier, pre-cooked meatballs! I’d also use veggie/protein spaghetti to add a few more nutrients.

8. Keto Pigs in a Blanket

I am very intrigued by this one… Or, if not caring about Keto, just wrap in crescent rolls and bake!

I think my kids would be all-in for these… You can make it healthier by using protein/veggie pasta and wheat bread crumbs
