I made this butternut squash soup recently and it was easily one of the best things I have ever made. As my husband said, “This tastes fancy!” and I was told to put it on the “list.” You know, the list that doesn’t exist but somewhere there is apparently this list of go-to recipes?

And I topped the soup with pistachios and homemade croutons using this recipe…. SO GOOD! Tip- don’t overbake; I think they’re even better when not super crunchy!
