For New Year’s Eve, we made one of our very favorites for the first time, French Onion Soup. While it does take some time to make with the slicing of all the onions, the longest part is just waiting for all those delicious flavors to marinate.
Below is the recipe we used, but we had no idea what Vidalia onions were, so we used three sweet onions and one red. We thought it was slightly too sweet, and that could have been due to the onions we chose. But overall it was very good, rich, and comforting!
We also topped ours with three types of cheese; Muenster, Swiss, and Gruyere.
*Note- The recipe calls for low-sodium beef broth- get that or it can be slightly too salty!
***If we had thought ahead, I would have bought THESE ramekins. We ended up making this recipe last minute and buying pricey ones from the grocery store.
