Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

Low Carb Tacos
I thought we would have tacos on this night but plan on making them low-carb by buying THESE taco shells. To make them easier to eat for the kids, I thought I would also kind-of “grill” them so that the ingredients stay put and the cheese melts.
