Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
I have not tried any of these recipes before, but I think they all look simple and delicious enough to give a try!

One Sheet Pan Garlic Roasted Salmon with Brussels Sprouts
We just got back from our anniversary trip, and while there we did a little fishing and came back with some salmon, so this looks like the perfect thing to make with it.

Today marks 8 years for my husband and me, and while this night is usually our date night since we just got back from being away, staying home and ordering in sounds pretty nice.
Wednesday
We are having dinner with friends, and I am not sure what to bring yet because I am horrible with side dishes. Anyone have any go-to suggestions?

Meal planning is a work in progress for us. The grilled chicken BLT tacos look amazing and will soon find their way to our table. Parmesan zucchini corn is a great side dish.

Oh those cheeseburger wraps look interesting! I plan what we are making for the week, but don’t plan specific days for everything. And you can always tell when it’s almost time to go grocery shopping because we have leftover/pantry day too!
