Menu Planning Monday #72

Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.

We did it! We made it through Christmas and gosh, I am feeling mixed emotions about it! On one hand, we had SUCH an amazing day and memories leading up to the special day, so the fact that it’s over is a little sad! But on the other hand, it’ll feel nice to get things back to normal around here, too.

We are heading out for a family reunion and will be eating potluck style.

I have eaten sooo many sweets over the holidays and feel like I need to detox! This soup looks nice and healthy.

Pesto Spaghetti Squash Sausage Skillet 

I have half a jar of Costco’s delicious basil pesto and was searching for a new pesto recipe to try out when I cam across this one. I searched for “pesto” and “spaghetti squash” and when this popped up I knew it was the winner.

Bleu Cheese Smothered Steaks

My friend Rachelle taught me how to make these steaks a few years back and I have since made them every Valentine’s Day for the last three years. They are HANDS DOWN the best steaks ever made in our home. Sorry, husband, but I take the cake on these ones. They are SO good. So, this is what we will be having for New Years Eve. Total crowd pleaser! I think I will serve with baked sweet potatoes and baked parmesan broccoli, too.

  1. Yum! That soup looks delicious! I’m in town with family a few more days, but I’m definitely looking forward to getting back home and to my routine with my morning green smoothies. I could definitely use a little “detox” from the sweets myself!
