Welcome to another Menu Planning Monday! Here I try to plan out healthy, EASY meals that will get me in and out of that kitchen as quickly as possible while still keeping our palettes satisfied.
After getting home from vacation I didn’t feel like cooking much last week, and that resulted in unhealthy dinner options, so we are back at it this week.

Crockpot Salsa Verde Honey Lime Chicken Tacos
I keep the sour cream and taco seasoning out of this recipe and top it with diced avocados, and it is YUM!

This recipe is GOOD! The balsamic glaze is drool-worthy. I suggest doubling the glaze as I wished there was more!
