I followed the recipe to a T but the centers never baked! I got 22 muffins (which I could have put less in each one because some overflowed). I just see that the recipe I had called for cream of tartar or vinegar as a substitute for that, I didn’t have cream of tartar so I used the vinegar. I wonder if that is what happened. I’m truly bummed…Did anyone else have trouble with this recipe??

If you used greek yogurt instead it would contain slightly more protein. Great recipe!

I am a nutritionist and will share this with my clients as a end of the day dessert option.

I just made these and it made 48-50 mini muffins and I used half the chocolate chips which came out to be about 20 calories per mini muffin.

If you used all the chocolate it would be about 90-95 cals each. So really not bad for a chocolate muffin. But not 25 cals like someone on pinterest is advertising. This looks like an awesome recipe and I can’t wait to make it!!!!!!!!!
